Dhaba Style Rajma

Rajma/kidney beans is great source of fiber and protein. Combination of Rajma cahwal is a staple food of India. Rajma in a thick curry can be served with rice or chapatti.

Step by step recipe:

  • Soak rajma for 3-4 hrs or overnight in enough water.
  • Drain off the water
  • Add rajma to pressure cooker with ½ jug of water, ½ inch cinnamon stick, 1 black cardamom, ½ tsp methi seeds, 1-2 chopped tomatoes, 1-2 pinch hing, ½ tsp turmeric powder, 1tsp salt.
  • Cover the lid and let it boil till 4-5 whistles.
  • In a kadhai add 2 tsp oil, let it let it heat on medium flame, add 1tsp cumin seeds, 2-3 chopped garlic, 1 chopped onion, sauté it.
  • Add ½ tsp red chili, ½ tsp turmeric powder, ½ tsp salt, 2-3 tsp tomato ketchup, 1 cup water.
  • Let it cook on high flame for 1 minute. Add 1 tsp butter.
  • Mash boiled rajma gently, add them to kadhai, mix mith tadka and let it cook for another 5-10 minutes on low flame.
  • Garnish with chopped Coriander leaves.

Ingredients:

  • Rajma 1 cup
  • Red chili 2 tsp
  • Salt 2 tsp
  • Turmeric powder 2 tsp
  • Oil 3-4 tsp
  • Tomato 1-2
  • Onion 1
  • Garlic cloves 2-3
  • Methi seeds ½ tsp
  • Black cardamom 1-2
  • Cinnamon Stick ½ inch
  • Tomato ketchup 2-3 tsp
