Bharma Bhindi is very delicious, flavorful recipe stuffed with spices. It is served as a side dish
accompaniment with rice or chapatti.
Step by step recipe:
Roast fenugreek seeds fennel seeds, coriander seeds and cumin in a pan on low flame.
Make a coarse powder of these spices in a mortar and pastel.
Add 2 chopped onion, 2 green chilies, 4-5 garlic cloves in a grinder and make a paste with ½ cup
of water.
In a kadhai add 1tsp oil , heat oil on medium flame and add 1/3 tsp ajwain with onion paste.
Cook it till oil gets separated.
Add 1 tsp turmeric powder, 1 tsp red chili powder, salt, 1 pinch hing, 2 tsp coriander powder and
coarse powder, mix all these with ½ cup of water and cook for 2 minutes and then keep aside to
let it cool.
Make a slit in bhindi, fill stuffing in it one by one.
In a pan heat 3-4 tsp oil and put stuffed bhindis with one stuffed tomato and let it cook to 3-4
minutes.
Flip bhindis and cover it up and let it cook for another 4-5 minutes on low flame.
Now add ½ tsp dry mango powder and coriander leaves.
